Tabbouleh Salad

Tabbouleh (or Tabouli) is a refreshing classic Mediterranean salad recipe. This dish is made with fresh parsley, tomatoes, scallions, and hemp hearts. The entire salad is flavored with a simple hemp oil lemon dressing, making a combination you'll crave.

INGREDIENTS

4-6 hearts of Romaine

3 bunches of Flat Parsley

4 ripe diced Tomatoes

3 thinly sliced Green Onions

⅓ cup of Mint leaves

⅓ cup Hemp Hearts

¼ cup diced White Onion

½ cup Nepra’s Extra Virgin Hemp Oil

¾ cup Lemon Juice

1 ½ teaspoon Salt

 

INSTRUCTIONS

  1. Wash parsley and mint under cold running water and use a salad spinner or pat dry with paper towels. Then, wrap parsley in paper towels and let set out for 20 min to soak up any moisture. Finely Chop. 
  2. Wash and cut Romaine Hearts in half, then set aside.
  3. Dice Tomatoes and White Onions into ¼” pieces. Add thinly sliced Green Onions in the same mixing bowl. 
  4. While mixing, add Hemp Hearts, Parsley, Mint, Hemp Oil and Lemon Juice until fully mixed. 
  5. Add salt to taste.
  6. Spoon Tabbouleh mixture into washed Romaine hearts.  
  7. Enjoy!
