Apple Spinach Salad

The combination of tender baby spinach, crisp apples, roasted pearl onions, chewy tart cranberries, crunchy hemp hearts and tangy hemp oil dressing makes for one addictive fall salad!

INGREDIENTS

For the Salad:

1 Red Apple (We used Pink Lady) cored and sliced ⅛”

2 cups fresh Baby Spinach

⅓ cup dried Cranberries

2 tablespoons Hemp Hearts

½ cup Apple Dressing (see below)

Dressing: 

1 Roasted Red Apple diced ½”

¼ cup Apple Cider vinegar

¾ cup Nepra’s Extra Virgin Hemp Oil

1 teaspoon Yellow Mustard

¼ teaspoon Cinnamon

¼ teaspoon Allspice

¼ teaspoon ground Black Pepper

½ teaspoon Salt

 

INSTRUCTIONS

Dressing:

  1. Set oven to 400* 
  2. Peel, core and dice a large Red Apple into ½” pieces.  
  3. Take 1 cup of raw pearl onions and cut the root end off and cut in half.  Place on a cookie sheet along with the diced Red Apple and cook until brown and tender.  Measure out ¼ cup for the dressing and set the rest aside for the salad. 
  4. In a blender add the roasted apple, ¼ cup of the pearl onions, spices, apple vinegar and puree. 
  5. While the blender is running slowly drizzle the hemp oil until it is fully incorporated. 

To Serve: 

  1. Take the roasted Pearl Onions and separate the layers into petals.
  2. Core the Red Apple and cut into thin ⅛” slices. 
  3. In a salad bowl combine the Red Apple, Pearl Onion, Cranberries and Spinach. Toss with the dressing. 
  4. Sprinkle with the Hemp Hearts (optional: or Walnuts) and serve.
